Need a quick and easy side dish for the holidays? Try this Sweet Potato Mash. Sweet Potatoes are an excellent source of Vitamins A, C, and D as well as several B-vitamins. They are also an excellent source of potassium and dietary fiber. They are beneficial for weight loss, digestion, depression and beautiful skin.
SWEET POTATO MASH
2 large sweet potatoes
1 tablespoon coconut oil
Sprinkle of sea salt
STEAM THE SWEET POTATOES. Peel and cube your sweet potatoes and then put them in a steamer either on the stove or in a steamer and steam for approx. 30-40 minutes. Your sweet potato is fully cooked when you can easily pierce the cubes with a fork through the center. When the sweet potatoes are fully cooked, remove them from the steamer and cool for 5 to 10 minutes.
ASSEMBLE THE MEAL. Put the sweet potato into a bowl. Use a potato masher to mash the potato. Add the coconut oil and sea salt and mix everything together well. Serve with pecan pieces sprinkled on top.
